About the Position
Moga Meats Inc. is seeking an experienced Chef for a skill-based position requiring strong hands-on culinary expertise. The successful candidate must have substantial experience in professional kitchen operations and the ability to prepare and cook North Indian cuisine.
This position requires practical cooking skills, knowledge of food preparation techniques, kitchen operations, food costing, inventory control, staff instruction, and the ability to maintain consistent quality and presentation in a fast-paced food-service environment.

Responsibilities
The successful candidate will be responsible for:
- Plan, develop, and prepare a specialized menu of authentic North Indian vegetarian and non-vegetarian dishes using traditional recipes and cooking techniques.
- Develop and standardize recipes for specialty chicken, goat, lamb, paneer, lentil, vegetable, and other North Indian dishes, including appropriate spice combinations and preparation methods.
- Select and combine spices, herbs, marinades, sauces, and other ingredients to achieve the required flavour, texture, aroma, and presentation of authentic North Indian cuisine.
- Supervise the preparation and cooking of vegetarian and non-vegetarian specialty dishes, ensuring consistent recipes, portion sizes, cooking times, temperatures, and presentation standards.
- Prepare specialized North Indian gravies, marinades, sauces, spice blends, and other components used in the establishment's signature vegetarian and meat-based dishes.
- Determine ingredient quantities and daily production requirements based on menu offerings, anticipated demand, portion standards, and food production needs.
- Supervise, coordinate, and instruct cooks and other kitchen staff in specialized food preparation techniques, recipes, cooking procedures, portion control, and presentation standards.
- Monitor the quality, consistency, taste, freshness, and presentation of prepared dishes and adjust recipes or cooking techniques as required to maintain established standards.
- Evaluate food and ingredient requirements, monitor inventory of meats, vegetables, dairy products, spices, and specialty ingredients, and assist with selecting and ordering supplies.
- Establish and maintain high standards for food preparation, sanitation, food safety, quality control, and kitchen operations while ensuring compliance with applicable health and safety requirements.
